Lightly season the magret, meat side, with salt and cracked pepper.

Peel the ginger roots, thinly slice them into fine strips, then place half of them on one of the magrets.

Use the other magret to cover the first one and wrap it securely.

Place a piece of aluminum foil in a baking dish, folding up the sides about 7 cm high.

Position the roasting pan near the grill rack, previously seasoned with salt and pepper.

Arrange the remaining ginger around it.

Cook each side in a hot oven for about 30 minutes.

Turn the roast as soon as the skin side is caramelized.
