    Take the lamb from the neck or breast, or even better, a mixture of both.

    Cut the onions into half moons, carrots, celery, fennel, and cabbage into quarters.

    Place the vegetables and meat in a large casserole.

    Add a good tablespoon of coarse salt and about ten peppercorns.

    Moor with six liters of water approximately.

    Bring to a boil, skim, let cook for 3 hours.

    Add the prunes, either pitted or not, and continue cooking for another 45 minutes.
