Grate the zucchini without peeling it.

Mix in a bowl the sifted flour with the yeast and salt.

Beat the eggs with the oil and milk.

Add the grated zucchini and feta cheese.

Fold everything together with the flour and yeast mixture, working the dough as little as possible.

Divide the dough into 12 buttered or greased muffin tins, bake in a preheated oven at 180°C (thermostat 6, 350°F) for 30 minutes.

Unmold and serve with salad leaves drizzled with a few drops of olive oil.
