    Blanch the cabbage in boiling water for 5 minutes.

    Drain it, cut it into quarters, and put it back in a pot with the onions studded with cloves of cinnamon;

    Cover with water, season, and simmer for 1 hour (30 minutes in a pressure cooker).

    Add the potatoes then continue cooking for 30 minutes. Fry the lard cut into slices.

    Place in each plate: 1 slice of bread, 1 slice of fried lard, and 1 or 2 thin slices of cantal cheese.

    Pour the soup over it and serve well hot
