Cover and cook for 30 minutes on low heat.

In a bowl, mix the mascarpone cheese with the 2 egg yolks, vanilla sugar, and 150 grams of granulated sugar.

Add your choice of flavoring.

Beat the egg whites in an electric mixer until very stiff peaks form, then add the icing sugar; you should get a smooth meringue.

In the bottom of a shallow dish (or individual cups), pour the cherries and their cooking juice, cover them with the mascarpone cream, and level the surface well.
