    De-shell the nuts and rinse them to remove sand (do not soak them).

    Remove the coral.

    Bring 4 tablespoons of sugar to a boil, moisten with vinegar (like caramel), then add the fruit juice.

    Reduce by at least one third.

    Dissolve a few pinches of beef stock, season with salt and pepper, then thicken with a little cornstarch.

    Beat with a generous knob of butter, off the heat.

    Pan-sear the scallops in butter and roast them in the oven for about 5 minutes. Drizzle with sauce sparingly.
